zucchini tacos

zucchinis galore!!! i have so many zucchinis that i have been trying to find new recipes and create new concoctions with all of them!!  so far i have made parmesan zucchini chips, regular zucchini chips, zucchini bread and chicken enchilada soup with zucchini.   my latest recipe to make up was zucchini tacos!!  my dinner was inspired by these chicken enchilada stuffed zucchinis i found on pinterest.  

Chicken Enchilada Stuffed Zucchini Recipe

i took one of the large zucchini's i had (more circumference) and instead of slicing it the long way (to make the "boats") i cut it the other direction. first i sprayed tin foil with nonstick spray on a baking sheet & preheated the oven at 350 degrees.  then i spread out the zucchini on the baking sheet... i cooked these for 5 minutes, flipped them and baked another 2 minutes.  meanwhile i cooked up some canned chicken (shredded chicken breast or ground chicken would also work great) with diced white onion.  i added some taco seasoning and continued cooking until the chicken is fully cooked.  next top the zucchinis with a good amount of chicken, place a bit of mexican cheese on top and bake 5 more minutes.  while those are cooking i whipped up some homemade guac (i used soft avocados, minced garlic, lemon juice, white onion & diced tomatoes) and sliced some green onion.  and thats it!!!!  easy peesy and super yummy!!!  i call these zucchini tacos. 





they are very healthy, yummy and easy!!  i also ate them with a scoop of hot salsa.  give em a try!
