spinach artichoke hummus

hummus is one of those things that up until a couple years ago i thought was disgusting!! i thought it was basically mushy baby food... i don't think i ever gave it a fair shot. i am not sure what triggered me to try it again but i did... and i started to love it!! in spurts... i love it for a while and then get sick of it for a while.  i always buy the store bought garlic or plain kind, both delicious!! why not try making it homemade ?? it really isn't difficult looking!!  so i did! here is my spinach artichoke hummus

ingredients:

garbanzo beans (i buy the canned because they are already soft)
frozen spinach
1 can of artichokes
1 T garlic
salt and pepper
2 T lemon juice

basically you cannot make this wrong... put all of the ingredients in a food processor and mix away!! i do the cans first and "flavorings" after, that way you can taste as you go and see if you want more or less of something like the garlic.



i only used about half of the spinach... that is a lot already





good with veggies, pita chips, or on something like a sandwich!! enjoy!!! : )
