pizza stir-fry

all i can say is yum!!! what an excellent idea this was..  it started because i wanted to make zucchini pizzas..  i frequently made these last summer,  they are tasty and light.. my favorite pizza is supreme or veggie, basically pizza with a lot of toppings..  this is difficult on zucchinis because all of the toppings fall off and i did not want to hollow them out because it seems so wasteful..  so i came up with pizza stir-fry last night!!

like any stir-fry, you can put whatever in it that you want!!! this is what i made

1 medium green zucchini
1 can of mushrooms
1 roma tomato
1/4 cup white onion
1/2 cup fresh spinach
10-12 black olives
8-10 large green olives
handful turkey pepperoni
1/2 cup mozzerella cheese
1 cup pizza sauce
1 T red pepper flakes
1 T basil
1 T oregano
1 T italian seasoning

1. first step i cut the green zucchini and white onion..  you can cut these as small or large as you want..  i diced the onion fairly small..  spray a medium frying pan and start cooking these on medium heat.. put a lid over top so the steam can cook the zucchini throughout..  if you are adding any other hearty vegetables i would advise to put them in immediately too..

2. next chop up the remaining ingredients & place in pan as you go..  i do not think the order really matters..  i put in the tomato, black olives, green olives, and pepperoni.. remember to stir every couple of minutes..  if your veggies are starting to stick to the bottom of the pan turn the heat down and watch carefully.

3. next add the red pepper flakes (omit if you do not want spice in yours), oregano, basil and italian seasoning.. stir throughout

4. add 1 cup of pizza sauce..  if you have not turned your burner down to low, do so now..  continue to mix it throughout.

5. dish up your stir-fry & top with your mozzerella cheese!! the stir-fry should be hot enough to made the cheese melt immediately, but if you want to add the cheese in the pan you can..

6. enjoy!!!!!
