Caesar Salad

April 15, 2013

this is my all time favorite salad ever!!! my dad used to make this all the time growing up and i love it!! i grew up learning to cook from my dad by just shaking and pouring things together, he rarely measures.. because of that.. i now cook that way a lot!! (just about every time unless i am baking) this recipe is all guess-ta-ments. i use more for more salad and less for less!! if i am making it for myself i add more mustard (but i have an addiction..yum!!) and more garlic (with less mustard) if greg is eating it. so taste as you go and figure out how you like it!

recipe:
salad:
leafy romaine lettuce- 1 bag or 1 head chopped up
bacon (cooked crispy & broken up.  i really like turkey bacon in it!!)
red onion (about 1/2 of one depending on salad size)
fresh shredded parmesan cheese
croutons (i prefer the garlic kind or homemade)

dressing:
4 T extra virgin olive oil
2 T lemon juice
2 T worcestershire sauce
1 T garlic (pre-bought from a jar or fresh.. both is good!)
1/2 cup finely grated parmesan cheese (kraft in the green container or fresh)
1 T dijon mustard (i prefer grey poupon)
1 t garlic powder
1 t onion powder
1 t black pepper
my dad puts 1 t of anchovy paste in also, i never have this on hand so i don't use it.

enjoy!!!

mix this in layers so all of the salad gets the nummy dressing! put a little of each salad ingredient in your bowl with a little dressing, mix well and repeat until it is all used!

to make the meal complete i prefer to add teriyaki chicken on top! it is a perfect compliment to the salad and so good!!! here i just baked chicken breasts in the oven. once they were completed i sliced them up and tossed them in teriyaki sauce (store bought at target). put the chicken on top of your salad and grate more parmesan cheese on top.
delicious!!!
