black bean burger

April 7, 2013

black bean burgers are a delicious & healthy thing to make for any meal.. they are cheap and easy to make.. i decided to whip some up for lunch yesterday because we had avocados to eat and all of the ingredients i love in them.
every time i have made black bean burgers i have made them a little different so i can find my favorite recipe.. these are the best yet!!

recipe:
1 can black beans
1/2 cup white onion
1/2 medium green pepper
3 cloves of fresh garlic
1/2 cup whole wheat flour
pepper and seasoned salt
onion powder
garlic powder

guacamole:
2 avocados
1/4 cup lime juice
1 clove of fresh garlic
salt and pepper to taste
1/4 cup white onion

1. first i strained the can of black beans & patted them with a paper towel.. when the beans are somewhat dry they stick together better.. put them in a small bowl & mash them moderately with a fork.. i do not like to make them perfect (or food process them) because i like the random chunks of black bean.

2. next chop the onion, garlic and green pepper to medium chunks.. then food process them to the size you want, i like them very blended. you can also substitute for yellow or red pepper, and if you have green onion on hand those are good too! once this is blended well add the seasoned salt, pepper, garlic powder & onion powder.

3. next stir the smashed black beans with the blended vegetables in a bowl. it will be pretty runny, put in a spoonful of the whole wheat flour (you can use all purpose flour too if you want).. stir in the flour.. keep mixing in 1 spoonful at a time until the mixture is thick enough to form a burger with.

4. next form into burgers... you can make them as small or large as you want.. i made 4 burgers with this amount.. cook over medium heat until there is a crisp bottom & flip.. once cooked throughout add a slice of pepperjack cheese to melt.. you can also cook them on the grill outside if you want crispier edges.

5. while the burgers are cooking, whip up some guacamole in the food processor with all of the ingredients.

6. enjoy!!!!

taste test... yum!! delicious!!! and greg even liked them!! getting a meal approved without meat in it is a rare occurrence around here. don't be afraid to try this recipe, its great!! and let me know how it goes
