foodie club

july's foodie club with my girlfriends was a picnic theme!!  so fun!!!  with so many beautiful lakes around, nightly free concerts and events we decided to join in on the fun and have a picnic in the park.  we met at lake harriet in minneapolis.  every thursday at the lake harriet pavilion is a free concert by local musicians.  each week is something different from jazz, orchestra, blues, big band & alternative.  our live concert was an alternative rock concert.  it was fun!  for foodie club you just had to bring along a dish or food good for picnicking.  i chose to give the ginger-miso quinoa salad a try from our cooking class a try for the first time.

recipe:  you can substitute any veggies for others... experiment & find what you like!! next time i want to try it without the spinach & with lots of mushrooms! yum

carrots
green cabbage
quinoa
spinach
edamame
cucumbers

ginger-miso sauce:
3-4 tablespoons rice vinegar
75% extra virgin olive oil & 25% sesame oil  (about 3 tbs)
ginger (2-3 chunks of the ginger or tablespoons of puree)
2 tablespoons honey
2 tablespoons dijon mustard



       wash, cut & prep all of the veggies



heat 1 cup of quinoa in 1.5 cups boiling water.. once brought to boil, reduce heat & cover for 10-15 minutes until quinoa is soft




saute carrots & then cabbage to soften up.. after 5-10 minutes on low heat add edamame




mix all of sauce ingredients in small food processor or bowl. once the quinoa is cooled off mix with sauteed veggies in bowl.  



make sure mixture is fairly cooled,  then mix spinach & sauce.  refrigerate 30 minutes before serving


it turned out delicious!  i personally thought the fresh farmers market spinach was too much in the dish that's why i might try mushrooms next time.  but that's what trying new recipes is all about!!  we had a great variety of dishes this month.  we had turkey wraps, spinach-artichoke cheeseball & roasted red pepper cheeseball,  cinnamon apple salad and strawberry pretzel dessert!  plus of course some wine,  strawberries & sun chips.  it was a fun evening to do something different, be with my girlfriends and chat with some fun music in the background.
